Applesauce Cake

2 1/2 cups cake flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp cloves
1 tsp salt (optional)
2/3 cup oil or shortening

2 cups sugar (or as desired)
2 eggs
2 cups unsweetened, tart applesauce (or canned)
2 cups raisins (or less as desired)
1 cup walnuts (optional)

Sift flour with soda, spices, and salt.
Cream shortening with sugar and eggs, beat until light and fluffy;
then stir in applesauce.
Add flour mixture slowly, beating in each addition.
Stir in raisins.
Turn into 9x13 well-greased cake pan.
Bake for 45 minutes at 350 degrees.
(or bake in greased muffin tins or two 8-9" layers 25-30 minutes)
Cool before serving.
Applesauce cake improves in flavor after storing 1 or 2 days in breadbox (without being frosted)

reccomended topping: cream cheese frosting.
