Chicken and Potatoes Oregano
Ingredients:
- 6 small potatoes (or 3 medium)... approx 1.5lb?/
- 1 small onion (mom says she usually omits this)
- 1 stalk celery (probably should double or triple this)
- 1/4 cup butter
- 6 thighs (maybe appox 2 1/4 lb)
- ?? amount of dried oregeno
- ?? amount of salt
- ?? amount of pepper
Directions:
- Preheat (large, at least 12") electric skillet to "medium" (325? 375?)
- Cut potatoes into cubes, mince onions
- Spray large skillet with cooking spray (or butter)
- melt butter
- add potatoes, onin, and thighs
- sprinkle salt and pepper
- cook 15 min. turning potatoes often with a pancake spatula (slightly tricky as chicken covers pretty much all the potatoes, kind of have to lift the chicken out one piece at a time to do this)
- Turn thighs, add oregeno
- cook 10 more minutes until well browned and fork tender
