Oatmeal Muffins

1 1/2 cups sifted unbleached, whole-wheat, or enriched flour
1/3 cup oatmeal
1/4 cup wheat germ
1/2 teaspoon salt
1 tablespoon brown sugar (or use honey to taste)
1 tablespoon dark molasses or honey
2 1/2 teaspoons double acting baking powder
1 egg, beaten
1 cup milk (or use cream)
3 tablespoons melted margerine or oil
optional: add applesauce, raisins, and spices
(although i'm not sure what spices were called for)

Combine all dry ingredients.
Mix together the egg, milk, and shortening, and pour all at once into dry ingredients.
Stir briskly until moist but somewhat lumpy.
Fill greased muffin tins 2/3 full and bake at 425 degrees for 25 minutes.
Makes 12 to 15 muffins.
