Spanish Omlette

2 eggs
2 teaspoons water
1 tablespoon butter
1 chopped tomato
1/2 diced red pepper
1/4 cup grated cheddar (or colby jack)
chopped parsley
1/2 diced green pepper

Beat the eggs and water together and season to taste.

Heat the butter in a medium pan and add the eggs.

Cook for 2 minutes, then sprinkle with combined cheese, tomato, peppers and parsley.

Cook until the base becomes golden brown.

Fold in half and serve immediately.

Serves 1-2
